What's for lunch?

Over 90% of office kitchens have a microwave cooker.  They are simple to use, fast and you can make a super healthy meal in minutes.  With Summer upon us, we are loving experimenting with more versatile (and colourful!) recipes for our office lunches.

What you’ll need

  • 1 ripe avocado
  • a squeeze of lime juice
  • pinch of chilli flakes
  • 2 eggs
  • 1 slice of bread
  • salt and pepper

How to make it

  1. Mash the avocado in a bowl, add a squeeze of lime juice and the chilli flakes then set aside
  2. Take two mugs, one for each egg and fill each up to halfway with cold water. Crack an egg into each cup then cover the mugs with clingfilm
  3. Microwave the two mugs together for 90 seconds, then in 15 second bursts until done then drain
  4. Toast the bread and spread on the avocado mix.  Top with your two poached eggs and a twist of salt and pepper
