What you’ll need
- 1 ripe avocado
- a squeeze of lime juice
- pinch of chilli flakes
- 2 eggs
- 1 slice of bread
- salt and pepper
How to make it
- Mash the avocado in a bowl, add a squeeze of lime juice and the chilli flakes then set aside
- Take two mugs, one for each egg and fill each up to halfway with cold water. Crack an egg into each cup then cover the mugs with clingfilm
- Microwave the two mugs together for 90 seconds, then in 15 second bursts until done then drain
- Toast the bread and spread on the avocado mix. Top with your two poached eggs and a twist of salt and pepper
